Green Beans Potato Gratin Traybake
Polpettone genovese is a traybake with mashed potatoes and green summer veggies: lots of basil and lots of French beans. It’s a delicious vegetarian meal. Easy to make ahead if you have guests at dinner, delicious the day after warmed up at the office.
Coconut Chocolate Cake
This is the birthday cake my mum always used to bake for me: moist, chocolaty perfection. Patiently melt dark chocolate, fold in desiccated coconut, pour the batter into your cake tin, watch it rise in the oven, and cut a slice of flaky fluffy cake. Pure bliss and childhood memories.
Tortilla de patatas
A wonderful Spanish dish made of two of my favourite ingredients: potatoes and eggs! It can be enjoyed as an appetizer, a picnic centerpiece, or a mid-afternoon snack. Tortilla is the best tapa, the first mouthful will transport you to beautiful sunny beaches.
Pasqualina cake
Don’t be fooled by the name, this is a savoury dish! A simple tart you can easily bring to a picnic with a crispy puff pastry case and a filling of ricotta and spinach – the most famous Italian couple. It is traditionally served at Easter but it’s so good and easy to make, you’ll end up eating it all year round.
Avocado chocolate mousse
Avocado, banana, and cocoa: this odd combination surprisingly works! In just a couple of minutes, you’ll have a satisfying, smooth and rich chocolate mousse, a dessert to end dinner or a sweet treat for any time of the day.
