Blueberry yoghurt banana bread

My twist on traditional banana bread: sweeten by blueberries, soften by Greek yoghurt. My banana bread is a light simple cake and it’s perfect for breakfast, tea, dinner, lunch, midnight…really any time!

Baking a very simple cake is one of the greatest pleasures in life. A few things can beat a homemade bake. Offering a slice of cake is the most romantic gesture.

Simple bakes are not necessarily easy to make, they often depend on an exact ratio of ingredients.

It took me a while to get my banana bread right. I have made so many mistakes while trying out my bake and learnt something new each time. For example, if you add too much yoghurt the cake will never rise, if you add too many blueberries the cake will never fully bake. The recipe I am sharing today, my final version, is very dear to me as it never fails.

Dear friends if you try this recipe have a scale at hand and go for the exact grams. Feel free to change fruit type though, other berries work a treat, and you can also go for a flavoured yoghurt for extra taste. Don’t change anything else.

This type of bakes reminds me of the cakes my mum used to make us for breakfast, always using yoghurt as the fatty ingredient. Yoghurt-based cakes always bring me back home and give me comfort.

This loaf also uses banana which are not a familiar ‘cake ingredient’ to me. Banana in cakes is very much of a new concept in Italy. So, this cake also tastes of independence to me and reminds me everything I learnt/I am learning while growing up.

This cake is about adulthood: starting from your roots but going into your own directions. A balancing act of the family you were born into & the family you chose (a partner, a dog, kids, a plant, or your own beautiful self).

Ingredients

  • 3 eggs

  • 120 g caster sugar

  • 80 ml sunflower oil

  • 100 g Greek yoghurt

  • 1 mashed banana

  • 300 g plain flour

  • 10 g baking powder

  • 50 g blueberries

Method

  • Beat the eggs with sugar for 3 minutes
  • Add in and mix all the other ingredients (in the above order)
  • Pour the batter in a 30 x 10 cm loaf cake tin and bake for 50 minutes at 180 C
