I love carrot cake and I’ve found a quick and easy way to make it with oats in just one mug. I mainly eat it for breakfast, but I wouldn’t complain to have it as an afternoon treat.
Prepare it the night before and wake up happy.

This evening I am mixing up all the ingredients so to have my mug carrot cake ready for breakfast. I wanted a little something to make me wake up in the morning. I can be so lazy in cold winter days and the softly warm duvet always calls me. These days, the only thing that can wake me up is something sweet, who’s with me?

A few years ago, I’ve found a recipe for a carrot cake porridge in a food magazine. Unfortunately, I didn’t keep the magazine, but I recently tried to recreate the same recipe. The result was even better than I remembered, and I transformed the recipe into a breakfast dessert.
Yes, that’s a think if you have a sweet tooth like mine.
We all need a little pick me up sometimes.
Tonight, my head is heavy with thoughts and as I am mixing up oats with maple syrup, I think of how hard it is for me, and everyone really, to believe in ourselves.
I took pen and paper and let my thoughts go.
Although what I wrote is messy and weird and trivial, a stream of consciousness really, I decided to share it with you on the blog.
In life, it’s essential we believe in ourselves.
Only if we believe in us, we can achieve something.
From that belief, we’ll build strength and stamina.
From that belief, we’ll think we are worth it.
From that belief, we’ll find an end goal.
From that belief, we’ll love ourselves.
Sometimes, especially in our downfalls, we can’t find self-belief without the help of someone or something external.
Sometimes, we need someone or something to plant a seed first. Afterwards, it’s up to us, and us only, to do the work and cultivate it, but it can all start and flourish thanks to a helping hand.
We don’t need to be afraid to reach for it. There is nothing more generous than offering an act of love. There is nothing braver than accepting it.
Sometimes, we need someone to believe in us before we can believe in ourselves.

As I promise myself to believe in myself more and enabling others to do so too, I share with you my dear recipe.
I hope it’ll also make you wake up with a smile. I hope you’ll find the precious self-belief between one spoon and another.

Mug Carrot Cake

Prepare it the night before, and wake up with a smile.
Ingredients
50 g grated carrot (1 small carrot)
50 g grated apple (half a small apple)
1 mashed small ripe banana
1 tsp ground cinnamon
1 tsp ginger
1 tsp almond or peanut butter
60 g oats
1 tsp baking powder
125 ml plant-baked milk
25 g almond flakes or any chopped nuts you like
- To serve
Plant-based yoghurt and fruit
Method
- Mix all the ingredients in the order above in a big bowl. Whisk it all together till well combined with a spatula.
- Transfer the batter into two ovenproof mugs and bake them for 30 minutes at 180 C. They will still have a wobble in the middle.
- Serve it with yoghurt and fruit, Have a great day!
Notes
- The apple, banana and carrot will act as natural sweeteners but if you need more, add one tbsp of maple or agave syrup to the batter.
