A summer salad with simple, fresh ingredients: peaches, baby spinaches, and feta dancing all together with balsamic vinegar. Ready in 5 minutes!
This salad was for me the greatest personal challenge as I don’t like fresh spinach that much but I bought a massive bag and got to make the most of it. I remembered stone fruit does really well when combined with the sad spinach so I decided to give it a go and perked it up with feta cheese.
I liked it so much that this salad is now a staple in our kitchen. You can serve it as a starter at a garden party or alfresco dinner (please invite me) or bring it for lunch in the office or at the beach (lucky you).
It takes no time to make and it’s a real treat when you can be bothered to cook and turn on the stove.
Peach Feta Salad

Ingredients
80 g fresh baby spinach
1 peach
6 cherry tomatoes
80 g feta cheese
2 spoons of balsamic vinegar
1 spoon of extra-virgin olive oil
2 spoons of sunflower and pumpkin seeds
Salt and pepper to taste
Serve with toasted bread
Method
- Chop the peach, tomato and feta cheese
- Mix all the veggies together and add the condiments.
- Let the salad absorb all the flavours for 5 minutes, serve and enjoy
